Friday- 3 miles + arm definer workout

Yesterday morning as I got ready to workout while J took his nap, I had company! I love having a workout buddy, especially when it’s my husband. He ran while I did my arm workout. =)


Later on, we had C, J’s cousin, over to entertain us with his mad b-ball skills. Seriously, watch out, he’s gonna be the next big thing.


Today I decided I needed to make banana bread or waste money by throwing away brown bananas. I opted for a more delicious choice.

Here’s the recipe I got from my talented cousin Marissa:

Oven 350*

1 1/2 cups flour
1 1/2 tsp. Baking powder
1/4 tsp. Baking soda
1/4 tsp. Ground cinnamon
1 egg
1 cup mashed bananas
3/4 cup sugar
1/4 cup oil

1. Grease the bottom and 1/2 in up the sides of a bread pan or line a muffin tin, set aside. In a medium mixing bowl combine flour, baking powder, baking soda, cinnamon, and 1/8 tsp of salt. Make a well in the center, set aside.

2. In another bowl combine egg, bananas, sugar, and oil. Add egg mixture to dry mixture all at once. Stir just till moistened.

3. Spoon batter into prepared pan (or muffin cups for about 15-20 min). Bake in 350* oven for 50-55 min or until wooden toothpick comes out clean. Cool on wire rack for 10 min. Wrap in foil. Makes 1 loaf.


I love how simple it is and no electric mixer involved. You could easily healthify the recipe a bit more with wheat flour, apple sauce instead of oil, etc etc. I on the other hand, did not. In fact, I added extra cinnamon and chocolate chips=) Since it has bananas in it, it still counts as a fruit serving right? right.
