Today I’m so thankful for Josh’s relationship with J. I love that J is totally a daddy’s boy lately. The minute he hears the garage he bolts in downstairs to see his dad while screaming, “Dad!” “Daddy!” “Dada!” I love witnessing that everyday.

This last summer walking around the park

I’m so thankful that there are a variety of vegetables out there. I’m sorry all you Brussels sprout lovers, but I made some for the first time last night, yuck. I seasoned them with salt and pepper, a little bit of extra virgin olive oil, and roasted them in the oven. Did I do something wrong?

I’m thankful for my home gym. I love having the setup that I do. I know I’m spoiled and I try and utilize it everyday so that I don’t take advantage of the wonderful space I have. I know this setup won’t work forever(my 3yr old niece and nephew can easily came in and out of it) so I’m thankful that it works for us right now.

Welcome to the Sugar Plum Runner! I grew up in WA state, but currently reside in UT with my husband Josh, son Jackson, and 2 daughters Lily and Claire. I love running, but I have never been so inspired to run, race, and blog about it since 4 years ago after I had Jackson. I grew up playing soccer and cheered in high school. My favorite part of both sports(and yes I consider cheer leading a sport) was the conditioning. I found myself running after practice was over on my own. That's when I realized that running may be the sport I really loved.

  2. I can relate to this post in so many ways! B is also entering a big daddy phase, and after a loooong 16 month mommy phase, it’s really nice! Also, I always leave the toilet paper at the garage door for G to bring in when he gets home. It is way too bulky to carry and it’s not like it will spoil sitting in the garage all day. He gets very excited for his toilet paper presents that are waiting for him.

  3. Hey Sharsti! I just love reading your blog! I tried brussel sprouts a friend made once and they were good. Not my absolute favorite vegetable, but she roasted them just right! I remember hers looking a little darker, maybe roasted longer? I’ve also heard that sprinkling them with balsamic vinegar is good as well. Here’s her recipe:

    Ingredients:

    1 1/2 pounds Brussels sprouts
    3 tablespoons good olive oil
    3/4 teaspoon kosher salt
    1/2 teaspoon freshly ground black pepper
    Directions

    Preheat oven to 400 degrees F.
    Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly. Sprinkle with more kosher salt. Serve immediately.

    Maybe that’ll help? Sounds really similar to what you did though.

    • Jessica! That is very helpful, I did everything she did except cook it long enough and cut the little ends off! haha I think I only roasted mine for about 20 minutes at 425*. I think your right, I just need to cook them longer and turn them throughout the roasting process lol thanks!

  4. I’m thankful for the sunshine and warm weather that Florida brought today, I’m thankful for good friends, and I’m thankful for my weekend starting tonight 😀 My favorite vegetables are spinach and mushrooms. I cannot get enough…they are my favorite combination.

    yay! i just read your blog and discovered a fellow lds stay home mom runner. there are lots of runners out there and lots of mom runners, but not as many lds mom runners. it’s nice to come across one once in a while. there is a 1/2 marathon race that started a few years back in vancouver, wa (where my husband and i lived for a long time before moving to minneapolis for law school) and it is just for women. it started by women in my stake and it’s mostly lds who run although any woman can run. it’s spreading and i am trying to get the founders to let me make it into a series by bringing it to the twin cites (and maybe eventually other cities as well) it’s in the baby stages and i am not even sure the founders want anything more than that, but i asked so we shall see.

I am thankful that I have a gym at my complex that I can use on mornings that Dan wants to get some extra sleep. I am also thankful that E News was on during my elliptical session this morning, making it so much more fun!

  8. I am absolutely thankful that I have a treadmill. I just got mine in December and it has been so awesome to have. I am also perplexed by how to properly cook brussels sprouts. I’ve had them roasted so that they’re just a little cripsy and black on the edges and they were so good, but I have no idea how to cook them myself. Maybe high heat in the oven? I think my favorite vegetable is the sweet potato.

  9. That’s so nice you have a home gym!
    we recently bought an elliptical for my mom. I REALLY dislike using the elliptical (well, since i’m a running addict) but it is such a niiiice alternative when I don’t want to run or head to the gym!

  10. I hear you. . . I hate brussel sprouts too – no matter how they are prepared.. . thankfully, I like most other veggies! I am thankful for the nice weather we had on our vacation in Florida this week!
