Monday- 5 miles, 9:22 pace + ab workout
I ran 2 miles then did 5 min of abs, ran 3 miles then 10 min of abs. I don’t know why, but this has really helped me break up the monotony of treadmill running. I can’t wait for nicer weather to get more runs outside.
I made some Oreo cupcakes for Easter for the my in-laws. I love baking and making something look delicious. The recipe is super easy, I got it from the recipe book Josh got me for my Birthday last year, “101 Cupcake Recipes.”
1 chocolate cake mix
1 cup sour cream
18-24 Oreo cookies
Blend the cake mix, eggs, and sour cream together. Fill cupcake pan 1/4 with batter, then place an Oreo and push it down a bit. Fill the rest of the pan 3/4 full with batter. Bake for 12-18 min or until a toothpick comes out clean from the middle.
Top with cream cheese or butter cream frosting. * I mixed the frosting with more Oreo and topped with with half an Oreo.
