Wednesday- 2 miles on treadmill
I didn’t have time yesterday morning to run outside, but hopefully as you read this I’ve gotten myself up and out the door=) I know the snow is coming any day so I gotta soak up what’s left of fall. Anyways, I ended up running 2 awesome miles on the treadmill last night. I rarely run at night and my stomach wasn’t happy about it, but the rest of me was!
Kelli actually has a dog, 2 cats, 2 birds, a bunny, a fish, a hamster, and some reptiles that I don’t think I ever want to meet. J is in heaven any time we go over there. He was laughing and having a great time with one of her cats.
1 can tomato sauce
1 can diced tomatoes
1 can stewed or regular black beans drained and rinsed(or any kind of bean that you prefer kidney, pinto, etc)
1 can corn drained
1 can diced olives
1 small can green chiles if you like a little kick
1/2 pound ground beef, turkey, or whatever protein you like. Or you can make it meatless(I actually enjoy meatless better) Cook until browned season with salt, pepper, and taco seasoning to taste.
Taco seasoning to taste
Add everything into a large pot, brown/cook meet and add it in, add in taco seasoning to taste. Bring to a boil, then simmer for 15 min. Top with desired toppings, and enjoy!
Toppings: avocados, sour cream, cheese, fritos
Last night we had spaghetti and col slaw salad. This is one of my favorite dinners too. I used the rest of the meat from our taco soup for the spaghetti.
