Easy healthy taco soup recipe

Workout

Wednesday- 2 miles on treadmill

I didn’t have time yesterday morning to run outside, but hopefully as you read this I’ve gotten myself up and out the door=) I know the snow is coming any day so I gotta soak up what’s left of fall. Anyways, I ended up running 2 awesome miles on the treadmill last night. I rarely run at night and my stomach wasn’t happy about it, but the rest of me was!

20131113-192347.jpgMy neighbor Kelli stopped by yesterday to say hi and told us about her daughters new bunny. J got so excited, so we stopped by to meet Carmel.

20131113-192503.jpgKelli actually has a dog, 2 cats, 2 birds, a bunny, a fish, a hamster, and some reptiles that I don’t think I ever want to meet. J is in heaven any time we go over there. He was laughing and having a great time with one of her cats.

20131113-192431.jpgTuesday I made Taco Soup and corn bread for dinner. I love this recipe because it’s so easy and relatively healthy. I thought I’d share the recipe=)

Taco Soup

1 can tomato sauce

1 can diced tomatoes

1 can stewed or regular black beans drained and rinsed(or any kind of bean that you prefer kidney, pinto, etc)

1 can corn drained

1 can diced olives

1 small can green chiles if you like a little kick

1/2 pound ground beef, turkey, or whatever protein you like. Or you can make it meatless(I actually enjoy meatless better) Cook until browned season with salt, pepper, and taco seasoning to taste.

Taco seasoning to taste

Add everything into a large pot, brown/cook meet and add it in, add in taco seasoning to taste. Bring to a boil, then simmer for 15 min. Top with desired toppings, and enjoy!

Toppings: avocados, sour cream, cheese, fritos

second time is so you can really see the yumminess=)

Last night we had spaghetti and col slaw salad. This is one of my favorite dinners too. I used the rest of the meat from our taco soup for the spaghetti.

What’s your favorite easy/go to meal?

About Sugar Plum Runner

Welcome to the Sugar Plum Runner! I grew up in WA state, but currently reside in UT with my husband Josh, son Jackson, and 2 daughters Lily and Claire. I love running, but I have never been so inspired to run, race, and blog about it since 4 years ago after I had Jackson. I grew up playing soccer and cheered in high school. My favorite part of both sports(and yes I consider cheer leading a sport) was the conditioning. I found myself running after practice was over on my own. That's when I realized that running may be the sport I really loved.

  4. Yum!! Taco soup is one of my fall faves! In the past I’ve always made it with ground turkey but definitely want to try it meatless! Oh and with lots of yummy avocado 🙂

  5. Taco soup sounds divine for this crappy, cold weather! Thanks love!

  6. mmm, I love taco soup! Your recipe looks really tasty! If I’m ever in a pinch for dinner I usually end up making a loaded omelet because its something that I usually have all the ingredients for! Just cook a bunch of veggies, add some scrambled eggs, cook and serve with some toast! Easy on a busy night!

  7. I love taco soup!! It is perfect for a cold day! We actually had one of my favorite easy, go-to meals tonight. Healthy, avocado chicken salad! So good! I ate mine on a bed of spinach and tomatoes, and the Hubs had his in two whole wheat tortillas.
