Thursday- another 3 miles on the ol’ treadmill

It’s a good thing my treadmill has half of my heart. Seriously, I love it so much. I do get bored, but I usually try and have new music, watch a show, or do a crazy workout. I’m just so grateful I don’t have to go out in the storm.

I did, however, have to brave the storm to finish my Christmas shopping. I’m officially finished!(said in Toads voice at the end of Mario Kart) I also picked up my little sis cuz it was crazy out and my car has all wheel drive. It was so fun shopping with her and baby M.

I originally found the recipe on Pinterest, but my friend who is an expert on these desserts sent me her modifications and I loved the cream cheese in her recipe. Here it is:

Chocolate Chip Cookie Dough Truffles

4 oz cream cheese, softened
1/2 cup butter, softened
3/4 cup brown sugar
1 tsp vanilla extract
1 cup flour
1/4 tsp kosher salt
1 cup semi-sweet chocolate morsels
12 oz chocolate coating, melted (you can also use vanilla coating, to dip or drizzle) ***see note below***

1.Beat cream cheese and butter until creamy. Add sugar and vanilla. Beat in flour and salt. Fold in chocolate morsels. Put mixture in the fridge until it hardens up. It will be too soft to mold right after it is mixed. I had mine in the fridge for maybe 30 minutes or so.
2.Remove cold and firm dough from the fridge, use hands to mold into nicely shaped balls. I made all of my balls and then put them on a cookie sheet and let them freeze in the freezer. Once balls are frozen, using a toothpick, dip into melted chocolate coating and return to parchment. Drizzle with melted vanilla bark. Refrigerate and enjoy.

In Chicago, there’s icy rain right now, so I’m stuck inside until it stops… I don’t have a gym membership or a treadmill (although I have family 30 mins away who will let me use their TM, but who wants to drive hen it’s icy). Luckily, the last few days have only been bitter cold and not icy. I ran in the street against oncoming traffic so I could get better footing and avoid most of the ice.

  3. Oh goodness! I feel for you in that storm lady! I felt like such a hermit when we had that ice storm a couple of weeks ago. Temps are back in the 60s this week! But you seriously are rocking these treadmill workouts!!

    Great job braving the weather! I am so glad you posted this recipe! I will have to try it out this weekend! I love some good old dark chocolate for Christmas, lame but the good stuff is the best at the holidays! We are getting hit with rain, lots and lots of rain!

  9. Since I live in Texas we don’t receive too much ice here. We might a few times each winter, but it’s never long, so I just wait it out for it to melt before I hit the pavement again. I am sorry the weather is so bad there! I am not really a chocolate person, but your dessert still looks beautiful! I think sugar cookies will always be my favorite Christmas dessert because I have made them ever since I was a little girl.

    Ice is no joke… I use to run in Wisconsin with ice spikes on my shoes!
    Also, those truffles look perfect!

  12. mmmm, thanks for the cookie dough ball recipe! Looks so tasty AND easy!

    If its really icy out and I want to run outside I wear these things over my shoes that are kinda like chains for your car tires. They help to grip into snow/ice but are awful if you hit a snow-less patch. I have no idea where I got them but they actually make you feel pretty hard-core! haha
