BBQ Chicken Salad Recipe and a little snow fun

Friday- 3 miles on treadmill

I knew a good run was in store after my not so great run outside. I just zoned out and ran with music. Sometimes just getting yourself to start your workout can be difficult, so I tell myself, “Just do it.”  It felt great and I could’ve gone longer but we were down to one diaper, one. That’s a risky line to walk with a 2 year old so I needed to get to a store asap.

After successfully getting diapers before anything stinky happened, we had fun outside in the melting snow. It was actually not too cold out.

Maybe it was a bit cold to be out there without a jacket.

For dinner last night I wanted something light. After all the heavy dinners we had over the holidays, I wanted to make one of my favorite healthier dinners, not to mention it’s so easy.

BBQ Chicken Salad

For 2

2 chicken breasts (thawed or frozen)

BBQ sauce to taste

S&P to taste

Salad blend

tomatoes, chopped

hard boiled eggs, peeled and chopped

Olives

Pineapple chunks(I love pineapple with chicken, so this is optional)

Cheese

Red Onion

Dressing(we prefer Ranch)

I put the chicken(mine was frozen) in an oven safe pan, sprinkle it with salt and pepper, and then cover each chicken breast with BBQ sauce. I put them in the oven for an hour and a half(only an hour if your chicken is thawed) at 350*.

I cover the pan with tin foil for an easy clean up

I make the salads with whatever toppings we have or feel like. Last night I added broccoli and green peppers for more veggies.  It’s yummy and super easy. You could make it more healthy by not using cheese or Ranch dressing and using a vinaigrette instead.

And because I had a salad for dinner, I get to have cookie dough ice cream and brownies for dessert. I follow the 80/20 rule, 80% healthy 20% whatever I want;)

I love running, but I have never been so inspired to run, race, and blog about it since 4 years ago after I had Jackson. I grew up playing soccer and cheered in high school. My favorite part of both sports(and yes I consider cheer leading a sport) was the conditioning. I found myself running after practice was over on my own.     I love the salad! BBQ chicken is one of my all time favorite toppings for a salad. I always say, Just Do It when it comes to workouts that I don’t want to do! 🙂

  3. Ice cream everyday is what I say! 🙂 haha, and the first night we were home from Christmas vacation all I wanted was a salad for those same exact reasons! I’ve never tried hard boiled eggs on my BBQ salads before, I’ll have to give it a go for a little extra protein!

  4. I love all of Bolthouse farms dressings, but my favorite is their salsa fiesta dressing (I think that’s what it’s called). I also love their Honey Mustard. It usually just depends on my mood when I’m picking dressings! A lot of the time, I just use cottage cheese as a dressing instead!

  5. Haha love your dessert rule 😉 I actually love salsa and guac as dressing. I know it sounds weird, but I swear it’s delicious! (It started when I made a taco salad)
